Wow I do not understand Openfire and FOP2. How do these work together?

They do not work together... fop2.20 provides a standalone IM Chat service.

Is there any documentation on how to use the FOP chat available?

I am figuring it out some.
I guess my biggest question would be is there a way to see an extensions status as far as online / offline in the FOP2 for messaging??

You cannot see connected fop2 state, there is no roster available in fop2 chat. This is a feature I will probably add in a future release, but not sure about the implementation.
